Confession. When I'm bored I bake. I made gluten free peanut butter cookies recently and I think they're easy enough to share with the masses.
1 cup peanut butter - I used the organic natural stuff I had on hand
1 cup brown sugar packed - this could be adjusted, I found they could have been fine with 3/4 cup of sugar
1 tsp vanilla
1/2 to 1 tsp salt - depending on if your pb has it in there already
1 tsp baking soda
1 egg
Combine it all together. You can add chocolate chips, peanuts, dried fruit etc. Roll into balls and flatten with your fingers. Bake at 350 for 8-12 minutes.

Have you ever tried these with almond butter? I haven't but wonder if they'd be any good?
ReplyDeleteI think it could be, I find almond butter is often pretty flat, I think it could be done if you added a little almond extract in addition to the vanilla, like a 1/4 tsp. The texture and everything else should be the same. Maybe opt to do a mix of brown and regular sugar too - since I don't know how the almond would taste with the brown sugar's molasses like flavour.
