Food Friday

Confession. When I'm bored I bake. I made gluten free peanut butter cookies recently and I think they're easy enough to share with the masses.

1 cup peanut butter - I used the organic natural stuff I had on hand
1 cup brown sugar packed - this could be adjusted, I found they could have been fine with 3/4 cup of sugar
1 tsp vanilla
1/2 to 1 tsp salt - depending on if your pb has it in there already
1 tsp baking soda
1 egg

Combine it all together. You can add chocolate chips, peanuts, dried fruit etc. Roll into balls and flatten with your fingers. Bake at 350 for 8-12 minutes.

Website Wednesday

Back on schedule and I have decided to go with a group that inspired me when I was running in Philadelphia rather than a site that may be gift appropriate... Check out this great after-school program that tackles the obesity/sedentary epidemic, drop out and crime rates by something as simple as an organized running/activity program - go figure.
